Veggie Quinoa Sausage Bowl

Who else loves all of the amazing Farmers Markets that are on during the summer months, which are packed full of colourful, delicious and organic fruit and veggies!? Since I have been working and living in Toronto for the summer months, I have discovered a number of unique little pop up Farmers Markets that I now get all of my fruit and vegetables from! The best one is called Farm City, where you are given a woven basket and you get to stack it sky high, until it is just on the brink of falling over for only $5!! Who doesn’t love a little veggie tetris?!? Let me tell you people get real creative with this…I now have found a strategy  of sticking beans in empty spaces, and having the large peppers, zucchinis and other vegetables evenly distributed throughout!

The picture below is of all of the veggies that were in my basket from my first visit. I can easily say that over the past few months of this veggie tetris my stacking has significantly improved!! Such a cool and fun idea, I can easily say that grocery shopping has never been so fun!

I usually just chop up all of the veggies, add them to a Wok, mix in quinoa and seeds/nuts and thats it! SO SIMPLE AND EASY, ITS AMAZING! Here is the very simple recipe for this incredibly healthy and vitamin, fibre and mineral filled meal.

Ingredients:

  • A large assortment of colourful organic veggies
  • 1-2 cups of quinoa (depending on how many veggies you have)
  • 3-4 tbsp of your favourite nuts or seeds (I love pumpkin and sunflower seeds)
  • 2 tsp garlic powder
  • 2 tsp red pepper flakes
  • Fresh basil
  • OPTIONAL:
    • 1-3 tsp hot sauce
    • some type of meat for added protein (I used one sausage for this recipe)

Recipe:

1. Firstly, start to make your quinoa and leave it to sit on the stove top. Then, wash and chop up your vegetables into bite sized pieces.

2. Add your quinoa and veggies to a Wok or large sauce pan with a small amount of coconut oil.

3. Add the rest of the ingredients to your Wok.

I used hot sauce to make it a little spicier as well as added one polish sausage in order to add even more spice and flavour! Its up to you though, add in whatever you like best!
