Happy New Year Everyone!

I hope everyone enjoyed a fantastic Christmas and New Years and are ready to start the year off strong! I can just tell, 2015 is going to be an incredible year! I apologize for my lack of posts recently, as I have been traveling around the Caribbean and have had very limited internet over the last three weeks. But don’t worry I am back and with LOADS of colourful dishes and new exciting fruits to share with you all! There were so many delicious, local fruits that I was able to indulge in that I had never even heard of, and some delicious combinations of juices that do wonders for the body that I cannot wait to share! So HOLD ON, because you are about to get blasted with COLOURFUL dishes full of health vitamins and nutrients and just bursting with flavour, and spice! The Caribbean was such a beautiful and wonderful place to experience as it is so different from Canada (where I am from), in that the dishes and local fruits, vegetables and proteins are so incredibly different. I love to try new recipes with unique ingredients that I am not familiar with, as it adds a little more excitement to each dish!

I learned so much about different things that were unique to each island, including sugar cane, agave, aloe, cocoa, passion fruit and jack fruit (sweet and sour sop)…etc. I will try to have all of this new information and fun facts available to you as soon as I can 🙂

I hope you enjoy these as much as I did. Many of them were created by an incredibly creative chef named Jojo, he fed us well over the course of the trip!

The fresh fruit every morning was amazing! The orange tomato looking fruit that is in front with the kiwis is called persimmon and is so incredibly delicious and nutritious! Having the consistency of a tomato mixed with a watermelon (if that makes and sense) and tastes sweet and yummy! In this mixture there is also fresh kiwi, pineapple, blueberries, strawberries, cantaloupe, passion fruit, papaya and jack fruit!

Organic scrambled eggs on a toasted english muffin muffin, topped with fresh avocado, tomatoes and a touch of pesto! With of course a delectable lychee fruit on the side!

Shrimp salad, the perfect lunch on a hot day! Barbecued shrimp on a bed of romaine lettuce drizzled with a light dressing and pesto.

A little indulgence on Christmas morning! A delicious almond cake with creamy custard poured in the centre!
