This quick and incredibly easy is 100% guilt free and delicious! This was my first time ever using plantain and I LOVED IT!!
You will surely be seeing plantain in more recipes soon to come, it was so easy to use and had such a great flavour that complimented the other vegetables as well as enhances the overall taste of the meal! HORRAY FOR PLANTAIN! This meal is not only delicious but also is not very costly to make, cooking on a budget can be hard to do sometimes, but this meal makes it easy!
Give this healthy vegan dish a try for a satisfying, inexpensive and quick dinner 🙂
- 1 cup quinoa
- 2 cups organic kale
- 1 bell pepper
- 1 plantain
- 1 tsp organic coconut oil
- 1 cup spinach
- 1 tbsp sesame seeds
- 1 tsp garlic powder
- 1 tsp onion powder
- Cook or bake the plantain separately first. Then combine all the rest of the ingredients and add them to a wok.
- Stir around until kale wilts down and until peppers are cooked.
- Add the plantain and stir around.
