Chocolate Coffee Cream Bars

The MOST DELICIOUS dessert you will ever taste! Everyone who has tried a piece thought that it was a full fat, sugar filled, rich, chocolate and coffee ice cream combination! It is quite the opposite! IT IS VEGAN, REFINED SUGAR FREE, GLUTEN FREE AND GOOD FOR YOU! You honestly will not believe it when you try it ๐Ÿ™‚




  • 1 cup raw cashews
  • 1 cup pitted dates
  • 2 tsp instant coffee granules
  • 2 tsp water (so your crust sticks together)


  • 1 regular sized can of coconut cream (use only the cream off the top)
  • 2 tsp instant coffee granules
  • 4 tbsp maple syrup
  • OPTIONAL: 2 tbsp baileys irish cream (this is not vegan)


  • 3 tbsp organic coconut oil
  • 2 tbsp unsweetened cocoa powder
  • 3 tbsp maple syrup
  • OPTIONAL: mix in some dark chocolate chips if you want chocolate chunks on top


1. Place all of the ingredients for the crust into the food processor and blend on high until smooth and sticks together.

2. Press the mixture into a parchment lined pan with a spoon, since it will be pretty sticky. I used a loaf pan but you could uses an 8X8 inch pan as well. Put into the freezer, while you prepare your filling.


3. Place all of the ingredients for the filling into the food processor and blend on high until blended together. Pour evenly over the crust and then put back into the freezer.

4. Leave in the freezer for 2 hours so that when the topping is poured onto the filling it does not sink down into the filling.

5. In a bowl heat up the coconut oil and then add the cocoa powder and maple syrup. Pour over your cool filling and put back in the freezer for a minimum of 30 minutes.


NOTE: this dessert melts really quickly once it is out of the freezer, not the “chocolate” on the top, but the filling. It is very similar to an ice cream.
